1 lb. Ground beef
1 large onion
1 large can of diced tomatoes or 1 large tomato
4 cloves of garlic
1 large green pepper
Cilantro (to be added at beginning and end)
2 cans of small red beans (2 cans per pound of meat)
1-2 chili seasoning mix packets
Red crushed pepper (least added)
½ teaspoon oregano
Grated cheddar cheese and/or other cheese(s)
Chips or tortillas
Bring 2 cups of water to a boil on High. Make a small slit in center of ground beef packet; add water and drain (in order to wash meat). Add meat to Crock Pot once drained and washed. Stir up meat so that it starts to break apart. Cover Pot and allow contents to boil once more. Add 1 tablespoon of sofrito. Let water boil until meat is gray in color, or, until it is no longer meaty red in color.
While water boils, cut up fresh vegetables (into slightly larger than diced pieces): onion, green pepper. Add vegetables to Pot and stir. Mash up garlic cloves, add, and stir. Add chili powder, 1 tablespoon of olive oil. Let boil. Add oregano, black pepper, red crushed pepper, chili powder packets, and 1 pack of sazon (color). Stir. Let boil.
Add tomatoes and stir. Open 1 can of red beans, wash and rinse, and add. Open 2nd can of red beans (not to be drained) and add.
